Homemade Spinach Spelt Wraps With Ratatouille Filling [Vegan]

For the Spinach Wraps:

  • 2 cups of spelt flour
  • 5 teaspoons spinach powder
  • 1 teaspoon salt
  • 3/5 cup and 1/2 tablespoon of water

For the Filling:

  • 2 onions
  • 1 teaspoon coconut oil
  • 2 zucchini
  • 3 carrots
  • 8.8 ounces potatoes
  • 3.5 ounces tomatoes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Juice of a lime
  • Fresh coriander
  • 1 teaspoon of black sesame

  1. To make the wraps, mix the flour with spinach powder, salt, and water to a sticky dough. Then knead on a floured working surface with your hands. Form the same sized balls and roll them out very thinly.
  2. In a pre-heated, coated pan, fry each wrap for 2 to 3 minutes on both sides, place aside and allow to cool slightly.
  3. For the filling, peel onions, zucchini, carrots, and potatoes and cut into cubes.
  4. Heat a pot of coconut oil and cook the onions for 2-3 minutes. Then add the remaining vegetables and fry for a further 5-8 minutes. Now stir the tomatoes, bring to boil once, then reduce the temperature and allow to boil for 12-15 minutes.
  5. Season with salt, pepper and lime juice. Serve with fresh coriander and sesame.
