Ingredients You Need for Homemade Seitan Roast [Vegan]

For Cooking:

  • 4 cups water for boiling

For the Wet Ingredients:

  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 teaspoons liquid smoke
  • 1 teaspoon white miso (optional)
  • 1/2 teaspoon dijon mustard
  • 1/4 cup plus 2 tablespoons water

For the Dry Ingredients:

  • 1 cup vital wheat gluten
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cayenne pepper

For the Seasoning:

  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce

How to Prepare Homemade Seitan Roast [Vegan]

  1. Set the oven to 350°F.
  2. Start boiling the water in a saucepan.
  3. In a medium bowl, put all the wet ingredients and mix them well with a fork, transfer to the food processor.
  4. Add the dry ingredients in and process until the mixture is fairly uniform.
  5. Wrap the mixture in a cheesecloth, shaping it into a dough ball. Wrap it somewhat tightly with the cheesecloth and put it in the boiling water for 4 minutes.
  6. Take off the cheesecloth off. Transfer the seitan into an oven tray.
  7. Season it with the olive oil and soy sauce, and roast for about 40-45 minutes.
