Ingredients You Need for Herb Tofu Caesar Salad With Spicy Pepitas [Vegan]

Spicy Pepitas:
  • 1 cup Pepitas (pumpkin seeds)
  • 1 tsp Extra Virgin Olive Oil
  • Squeeze Lemon/Lime Juice
  • ½ tsp Cayenne Pepper
  • ½ tsp Smoked Paprika
  • Pinch Sea Salt
Herb Croutons:
  • 4 slices bread (I used gluten-free), cut into cubes
  • ¼ cup Extra Virgin Olive Oil
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • Pinch of Sea Salt & Cracked Pepper
Baked Herb Tofu:
  • 1 small packet Extra Firm Tofu (organic & non-GMO), cut into cubes
  • ¼ cup Tamari (or Soy Sauce)
  • ½ Lemon, juiced
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • Pinch of Sea Salt & Cracked Pepper
Avocado Caesar Dressing:
  • ½ cup Macadamia Nuts (or Pine Nuts or any nuts you fancy)
  • 1 cup Water
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Apple Cider Vinegar
  • 1 small Avocado, pitted and peeled
  • 2 tbsp Nutritional Yeast
  • 1 Lime, juiced
  • 1 tbsp Agave Nectar
  • Pinch Cayenne Pepper
  • Pinch Sea Salt

How to Prepare Herb Tofu Caesar Salad With Spicy Pepitas [Vegan]

For the Spicy Pepitas: 
  1. Preheat oven to 300 F.
  2. Combine all ingredients in a bowl and mix well until pepitas are evenly covered.
  3. Place pepitas in a single layer on a lined baking tray and bake for 20 minutes or until golden.
  4. Remove from oven and allow to cool.
For the Herb Croutons:
  1. Increase oven temperature to 350 F.
  2. Combine all ingredients in a bowl and mix well until croutons are evenly covered.
  3. Place croutons in a single layer on a lined baking tray and bake for 10 minutes or until golden.
  4. Remove from oven and allow to cool.
For the Baked Herb Tofu:
  1. Combine all ingredients in a bowl and mix well until tofu is evenly covered.
  2. Place tofu in a single layer in a baking dish and top with remaining 'juice'.
  3. Bake for 10-15 minutes or until tofu has absorbed all the 'juice'.
  4. Remove from the oven and allow to cool.
For the Avocado Caesar Dressing:
  1. Combine all ingredients in a high-speed blender and blend on high until smooth and creamy.
Assemble:
  1. Sprinkle Spicy Pepitas, Herb Croutons and Baked, Herb Tofu on a bed of romaine lettuce leaves, drizzle with Avocado Caesar Dressing and enjoy!
