White Chocolate Layer:

  • 1 cup cashews, soaked in water
  • 2/3 cup coconut water
  • 1/2 cup pitted Medjool dates
  • 1/4 cup cacao butter, melted
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Mocha Layer:

  • 1 cup cashews, soaked in water
  • 1/3 cup maple syrup
  • 1/4 cup coconut water
  • 1/4 cup brewed espresso, chilled
  • 1/4 cup cacao powder
  • Pinch of sea salt

Preparation

  1. Blend all of the ingredients for the white chocolate layer in a high speed blender or food processor until smooth.
  2. Blend all of the ingredients for the mocha layer in a high speed blender or food processor until smooth.
  3. Layer the white chocolate and the mocha layers in jars and refrigerate them for a few hours, or freeze for 30 to 40 minutes before serving.
