    Ingredients You Need for Easy Gyros [Vegan]

    For the Soy Curls:

    • 1/2 package soy curls (roughly 2.5 cups)
    • 1 tablespoon arrowroot starch
    • 2 teaspoons avocado oil

    For the Cashew Dressing:

    • 1/4 cup raw cashews (soaked beforehand)
    • 1/4 cup and 1-2 tablespoons water
    • 1 teaspoon apple cider vinegar

    For the Toppings:

    • 1 pepper
    • Handful of romaine
    • 1/4 cup green onion
    • 4 gluten-free pitas

    For the Sauce:

    • 1/4 cup tamari
    • 1 teaspoon sesame oil
    • 2 tablespoons rice vinegar
    • 1 tablespoon grated fresh ginger
    • 1 clove garlic
    • 2 tablespoons coconut sugar

    How to Prepare Easy Gyros [Vegan]

    1. Soak 1/4 cup of cashews in hot water for 20 minutes. Preheat the oven to 350ºF.
    2. Poor water over the soy curls first and soak them for 10 minutes until they have softened and expanded in size. Drain the water and squeeze the soy curls to remove any excess water.
    3. Heat a skillet over medium heat. Add 2 teaspoons of oil to the pan. Toss the soy curls in the arrowroot starch then place the soy curls into the pan.
    4. Stir often as the soy curls may stick to the pan.
    5. Thinly slice the pepper and add to another pan with a little oil in in. Sauté the pepper until soft.
    6. Combine all the sauce ingredients in a small bowl. Whisk together. Once the soy curls start browning, add the grated ginger and finely chopped garlic. After 1-2 minutes, add the sauce. Coat the soy curls in the sauce and then let simmer for 5 minutes. Stir often. The sauce should mostly be absorbed at the end of this time.
    7. Heat up the pitas in an oven at 350ºF for a few minutes. Until soft and slightly poofy.
