These healthy, raw chocolate squares are perfect for a special occasion since they come together so quick and easy. That doesn't mean that you need a particular reason to make them though. Hey, celebrating the days that end in 'y' is good enough, right?
Double Chocolate Squares [Vegan, Raw, Gluten-Free]

1 rectangular loaf pan
Ingredients
For the Base:
- 1/4 cup raw walnuts
- 1 1/2 cups pitted dates
- 2 tbsp ground flax
- 3 tbsp raw cacao powder
- 3 tbsp coconut oil
- 3 tbsp cacao
- 2 tbsp raw agave nectar (or other raw liquid sweetener of choice)
- 2 tbsp water kefir
- 1/4 cup almond milk
- 1 tsp vanilla
- 1 tbsp ground flax
- 1/3 cup + 1/8 cup coconut flour
Preparation
For the Base:
- Put all ingredients in a food processor and pulse gently before turning to high speed and processing until a sticky dough ball forms.
- Press into a rectangular loaf pan and place in the fridge to harden.
- In a small saucepan, add coconut oil and honey and melt over medium heat. Add vanilla, almond milk and cacao and stir until all ingredients are warm and cacao has dissolved.
- Meanwhile, in a small bowl, stir together flax and coconut flour.
- Add water kefir and stir until absorbed.
- Add chocolate mixture to coconut flour mixture and stir together until a sticky dough forms.
- Spread the chocolate dough over the date base and refrigerate for 2-3 hours.
- Remove from fridge and cut into squares to serve.
- Store any leftovers in a covered container in the fridge.
