Double Chocolate Cake [Vegan, Raw, Gluten-Free]

Ingredients
Crust (base):
- 1 cup Brazil nuts
- 1 cup almonds
- 1/2 cup coconut shreds
- 1 tbsp xylitol or coconut sugar
- 1/2 cup coconut oil melted
- cinnamon and sea salt
- 1/2 of the base mixture
- 2 tbsp cacao
- 3 dates
- 1 avocado
- 3 tbsp cacao
- 1 tbsp xylitol or coconut sugar
- 1 tbsp chia seeds
- 4 tbsp melted coconut oil
- 1 pinch cinnamon
- 1 pinch sea salt
- Fresh Strawberries, pistachios, chocolate sauce.
Preparation
- Place all ingredients for the base into your high speed blender and mix until well combined.
- Put half the mixture aside and press the remaining into a small round tin. Place the tin in the fridge while preparing the rest.
- Blend the remaining nutty mixture with your cacao powder and your dates and press it on top of the base you have in the fridge. Put back in the fridge and prepare the mousse.
- Blend all ingredients for the mousse into your high speed blender and spread on top of your 2 layers, then back in the fridge for about 2 hours.
- Garnish with your favorite toppings.
