Crème de Menthe Brownies [Vegan, Gluten-Free]

These crème de menthe brownies are a labor of love but if you have the time, they are well worth it. You have a chocolate brownie base with a creamy layer of mine that is topped off with homemade chocolate. Needless to say, this decadent treat is delicious.

Ingredients You Need for Crème de Menthe Brownies [Vegan, Gluten-Free]

For the Brownies:

  • 1/2 cup vegan chocolate chips
  • 1/3 cup extra virgin olive oil
  • 3/4 cup cacao powder
  • 1/2 gluten-free flour
  • 1 teaspoon coffee
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla
  • 1/4 cup vegan butter, melted
  • 1/2 cup almond milk
  • 10 Medjool dates, pitted

For the Crème de Menthe:

  • 1 1/2 cup raw cashews
  • 1 cup vanilla almond milk
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon coffee (optional)
  • 1-2 drops peppermint essential oil

For the Chocolate:

  • 3/4 cup maple syrup
  • 3/4 cup raw cacao powder
  • 1/3 cup raw cold pressed coconut oil, melted
  • 1/8 teaspoon Himalayan salt

How to Prepare Crème de Menthe Brownies [Vegan, Gluten-Free]

To Make the Brownies:

  1. Preheat the oven to 350°F.
  2. Line an 8x8-inch baking pan with parchment paper
  3. In a food processor, pulse together the pitted dates, vegan butter, and almond milk. Use a spatula to scrape the sides.
  4. Add a little more milk and some extra dates if you need to. You want the batter to be smooth and creamy.
  5. In a large bowl, combine all of the ingredients together and them it well.
  6. Pour the batter into the pan and bake it for 25-30 minutes

To Make the Crème de Menthe:

  1. Soak the cashews overnight and then rinse them.
  2. Line a 9x5-inch loaf pan with parchment paper.
  3. Add all the ingredients o a blender and blend them until they are smooth.
  4. Pour the mixture over the brownies and then freeze them for 2-4 hours.

To Make the Chocolate:

  1. Mix all the ingredients together and simmer them while stirring the mixture until everything is fully combined.
  2. Pour the chocolate over the top of your bars and freeze them again until they are solid.
