Crème de Menthe Brownies [Vegan, Gluten-Free]
These crème de menthe brownies are a labor of love but if you have the time, they are well worth it. You have a chocolate brownie base with a creamy layer of mine that is topped off with homemade chocolate. Needless to say, this decadent treat is delicious.

How to Prepare Crème de Menthe Brownies [Vegan, Gluten-Free]
To Make the Brownies:
- Preheat the oven to 350°F.
- Line an 8x8-inch baking pan with parchment paper
- In a food processor, pulse together the pitted dates, vegan butter, and almond milk. Use a spatula to scrape the sides.
- Add a little more milk and some extra dates if you need to. You want the batter to be smooth and creamy.
- In a large bowl, combine all of the ingredients together and them it well.
- Pour the batter into the pan and bake it for 25-30 minutes
To Make the Crème de Menthe:
- Soak the cashews overnight and then rinse them.
- Line a 9x5-inch loaf pan with parchment paper.
- Add all the ingredients o a blender and blend them until they are smooth.
- Pour the mixture over the brownies and then freeze them for 2-4 hours.
To Make the Chocolate:
- Mix all the ingredients together and simmer them while stirring the mixture until everything is fully combined.
- Pour the chocolate over the top of your bars and freeze them again until they are solid.
