    Ingredients You Need for Creamy Vegan Mac and “Cheese” [Vegan]

    For the Pasta:

    • 1 (12-ounce) box gluten-free pasta

    For your “Cheese” Sauce:

    • 1 cup pumpkin puree, butternut squash puree, or sweet potato puree
    • 1 cup plant-based milk
    • 1 tablespoon coconut flour, gluten-free flour, or brown-rice flour
    • 4 tablespoons vegan parmesan cheese or nutritional yeast
    • 1 teaspoon Dijon mustard
    • 1 teaspoon garlic
    • 1 teaspoon onion powder
    • 1 teaspoon paprika
    • 1 teaspoon turmeric
    • 1/2 teaspoon pepper
    • 1/2 teaspoon salt

    For your Topping:

    • 1/3 cup gluten-free breadcrumbs
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 tablespoon olive oil or 1 tablespoon melted vegan butter

    How to Prepare Creamy Vegan Mac and “Cheese” [Vegan]

    1. Preheat the oven to 350°F. Next, cook one box of gluten-free pasta.
    2. While pasta is cooking, add vegetable puree, milk, flour, nutritional yeast, Dijon mustard, and spices to a separate bowl. Mix until fully combined. Sauce should be smooth and creamy and should resemble traditional mac and cheese sauce.
    3. Add sauce to the bottom of a 9 × 9–inch dish. When the pasta is done cooking, drain water and add to the dish with sauce. Carefully mix together until pasta is evenly covered with sauce.
    4. In a separate bowl, mix together breadcrumbs and spices for topping. Sprinkle evenly over top. Add to a preheated oven and bake for approximately 30 to 40 minutes. Let sit for 3 to 5 minutes before serving! Enjoy!

    Notes

    Broccoli and Garlic Variation: Add 2 cups diced broccoli and ½ tablespoon minced garlic into pasta mixture before baking. Save Some Time: Instead of topping with breadcrumbs, you can also top with mashed-up gluten-free cheese crackers or mashed-up gluten-free cheese crisps. Cheese crisps come in any cheese flavor such as parmesan, cheddar, etc. Any cheesy flavor will work!
