This delicious Veggie Pasta bake is topped in a decadent béchamel. It is the perfect warming dish for a cold night, or if you’re in need for a large meal idea! It is not the “cleanest” meal option but sometimes one must choose flavor over an extra couple minutes on the stair master.

Ingredients

For the Pasta:

  • 8 4/5 ounces pasta
  • 1 cup coconut cheese or any melty vegan cheese
  • 2 tablespoons olive oil
  • 1 cup asparagus, chopped
  • 2 yellow tomatoes, cubed
  • 1/2 cup zucchini
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 lemon, juiced

For the Cheesy Béchamel:

  • 1 tablespoon vegan butter
  • 1 tablespoon all-purpose flour
  • 1 1/4 cup non-dairy milk
  • 2 tablespoon nutritional yeast flakes
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Preparation

How to Make the Pasta:

  1. Preheat oven to 375°F.
  2. Add your water to a large pot.  Once the water is boiling, add your pasta and cook as instructed.
  3. Grate your cheese and chop and wash your vegetable.
  4. Into a large frying pan add your olive oil, and vegetables. Cook them down for 5 minutes and then add your seasoning.

To Make the Béchamel:

  1. Prepare the béchamel by melting the vegan butter over a medium-high heat.
  2. Once melted, add the flour and whisk it all together to form a roux.
  3. Let this simmer for 30-60 seconds until it bubbles and then slowly begin to add 1/2 of the plant based milk.
  4. Whisk the mixture continuously until it thickens, then slowly add the remaining milk and whisk it until no lumps remain and it is silky smooth. Adjust the liquid to suit your desired consistency.
  5. Once all the milk is combined and the sauce is smooth and creamy, remove it from the heat and add the nutritional yeast, onion powder, garlic powder, and salt.
  6. Whisk the sauce until the nutritional yeast is fully dissolved.
  7. Once your pasta is cooked, strain it and add it to the pan with the vegetables and seasoning.
  8. Now add your coconut cheese, lemon juice, and béchamel.
  9. Stir to get everything nicely coated.
  10. Transfer the pasta mixture to a deep dish and bake it for 20 minutes or until it's crispy on the outside, and hot and creamy on the inside. Add any garnish you would like.
