As a kid I always loved creamsicles! Nothing is better than vanilla ice cream and orange popsicle. That is why I created these creamsicle truffles, they taste just like the ice cream version but they are healthy and vegan!

How to Prepare Creamsicle Truffles [Vegan, Gluten-Free]
- Place 1 cup of shredded coconut and chia seeds in a food processor and blend until powdered.
- Add the coconut oil, sweetener, orange juice, zest, vanilla, and salt and process until well combined. Add remaining shredded coconut and pulse until just combined.
- Shape into 12 1-inch balls and freeze for at least an hour to set. Store in the refrigerator or freezer and enjoy cold or at room temperature.

I did exactly what you printed; the only thing was you said sweetener of choice; I am assuming after my fiasco that you meant a liquid one. I used my monkfruit and it never combined; I ended up using more orange juice, a teaspoon and still it would not mix as a dough; then I added a half a teaspoon more of coconut oil and it just would not stick; so I added a 1/8 of water and it helped but it still was dry. I just dumped it into a mini loaf pan and pray it will come out.
I used agave necture and that seemed to work
Is the 1/4 tablespoon orange juice the correct amount? It just seems like an odd amount to me.
I used blackberries instead of orange juice (as I had none at home) and it turned out really well, I used about 100g!
