Ingredients

  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1 cup coconut milk
  • Salt and pepper
  • 1 teaspoon nutritional yeast
  • Scant 3/4 cup unsweetened plant-based milk
  • 2 tablespoons vegan butter, melted
  • 3 tablespoons vegan cheese, finely grated
  • 1 large spring onion, finely chopped

Preparation

  1. Combine the flour, baking powder, salt, pepper and nutritional yeast in a bowl, and mix through.
  2. In another bowl, combine the coconut milk and plant-based milk. Add the liquid to the dry ingredients – first enough to make a paste and coat all the particles (use a whisk while doing this) and then the rest. Fold in the grated cheese, butter, and spring onion.
  3. Let the batter rest for 10 minutes while your waffle iron heats up, then fry until golden. Make sure you don’t pile the waffles up straight after coming out of the waffle maker – the steam will make the waffles go soft.
