Warm yourself up with this coconut lentil curry! This dish calls for spices that are simply made for curry perfection, and adds refreshing veggies to the lentil and coconut milk to make this curry an all around great dinner.

Ingredients
- 1 can coconut milk
- 1 can diced tomatoes
- 1 cup brown lentils
- 1 cup water
- 1/2 medium onion diced
- 3-4 garlic cloves diced
- 1 red bell pepper diced
- 1 zucchini diced
- 2 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
Preparation
- You can start by making this one of two ways. Either in a pressure cooker or in a pot on the stove. If using a pressure cooker add everything to the pot cover with the lid and cook on the stew setting.
- On a medium heat in a pot add the onion garlic and bell pepper and saute everything in a little bit of water or oil until the onions are translucent
- Next add the rest of the ingredients bring to a boil and them cover and simmer for at least 30 minutes.
- Once the lentils are soft and everything is cooked together serve over rice and top with cilantro and enjoy!
