Since deciding to try eating less gluten ( which in all honesty is not going very well because I’m not as strict with myself as I should be ), I’ve started using more chickpea flour in my cooking. I love coating vegetables with it! Oddly enough, it also has this unexpected eggy flavor, which makes it great for replacing the eggs in a Spanish Tortilla. My second favorite way to use it is to make this chickpea omelette bake, which is a bit like Socca, a typical flat bread you find in Nice.

Ingredients You Need for Chickpea Omelet Bake [Vegan]
How to Prepare Chickpea Omelet Bake [Vegan]
- Mix the water with the chickpea flour slowly to avoid any lumps forming. Add salt and pepper. When ready, leave it in the fridge for 4-5 hours. This way, the chickpea flour is easier to digest.
- Preheat the oven to 350 F.
- Fry the onions in a pan with a bit of oil until golden.
- Take the dough out of the fridge, and fold in the onions.
- Pour in a round mold. Top off with chopped tomatoes and oregano.
- Bake in the oven for 35 minutes.
