Ingredients

  • 2 cans of chickpeas (480g drained)
  • 2 cans of green lentils (235g drained)
  • 4/5 cups cucumber (cut into small cubes)
  • 1 1/3 cups cherry tomatoes (quartered)
  • 2 sticks of celery (~70g)
  • 4 spring onions (chopped – ~85g)
  • Bunch of fresh parsley (chopped)
  • Bunch of fresh coriander (chopped)
  • 3 tablespoons cumin
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic powder
  • Salt & pepper to taste

Optional:

  • 1/3 cup olives
  • Falafel

Preparation

  1. Place all the ingredients in a bowl and mix thoroughly
  2. Then cover and place in the fridge for at least 30 minutes to infuse
  3. Split into 3 big portions or 4 smaller portions and pop in the fridge for your lunches or dinners
  4. Enjoy!
