Cheese and Scallion Potato Waffles [Vegan]

A waffle maker is a wonderful investment. How else would you be able to make these delicious cheese and scallion potato waffles?! They're savory, cheesy, garlicky, and filled with potato-goodness. Serve these with a big dollop of guacamole on top for a yummy snack.

Ingredients You Need for Cheese and Scallion Potato Waffles [Vegan]

For the Waffles:

  • 5 ounces potatoes
  • 1/4 cup dairy-free cheese, shredded
  • 2 tablespoons whole or plain flour
  • 2 tablespoons non-dairy milk
  • 1 tablespoon vegan butter
  • 1 teaspoon baking powder
  • 2 scallions, chopped
  • 1/4 teaspoon garlic powder
  • A pinch of salt
  • A pinch of pepper

For the Guacamole:

  • 1 ripe avocado
  • 1 garlic clove
  • Juice from 1/2 of 1 lime
  • A pinch of salt
  • A pinch of pepper
  • Jalapeño (optional)
  • Cilantro (optional)
  • Tomato (optional)

How to Prepare Cheese and Scallion Potato Waffles [Vegan]

  1. Scrape any dirt off of the potatoes, dice them, and throw them in a pot of boiling water for about 15 minutes.
  2. Pour out the water and leave the potatoes in the pot.
  3. Add vegan butter, non-dairy milk, and vegan cheese, and mash it all together. It’s okay if it’s chunky.
  4. Add in the flour, baking powder, spices, and scallions. Mix well.
  5. Place a spoonful of the mix on a hot, nonstick (or oiled) waffle iron. Cook until golden.
  6. Start the guacamole while the waffles are cooking; scrape the avocado out of its skin, add to a bowl and mash well. Add the remaining ingredients, mix, and chill until ready to serve.

  1. I just made these waffles for dinner and they were DELICIOUS! I wasn\’t expecting them to be crispy like hash browns, but they were! Very tasty. I didn\’t make the guacamole. I had mine with maple syrup and vegan butter.
