These healthy quinoa rolls are a great and easy lunch to whip up within minutes. Avocado makes these rolls creamy and delicious, but feel free to add whatever vegetables you like!
California Quinoa Rolls [Vegan]
- 1/2 cup of cooked quinoa
- 3 sheets of nori
- 1 avocado
- 1 small cucumber
- 1/4 of a tomato
- Lay out your nori sheet on a cutting board. Smooth out some of the cooked quinoa on top.
- An inch above the edge of nori closest to you, layer on the avocado, cucumber and top it with a slice of tomato.
- Serve with coconut aminos or whatever sauce you like!
