Cooking Time



  • Two slices of your favorite bread
  • 4 tablespoons hummus
  • 1/3 cup black beans, cooked
  • 4 slices eggplants
  • 2 tablespoons sun-dried tomatoes
  • Vegan butter
  • Salt


  1. Grill the eggplant slices in the panini maker, approximately 5 minutes.
  2. Put the hummus on both inner sides of the bread slices.
  3. Lay the eggplant slices on the bottom, add a pinch of salt.
  4. Add the black beans and a little more salt over them.
  5. Add the sun-dried tomatoes.
  6. Close the sandwich and spread the vegan butter over the top slice. Place the assembled sandwich in the panini maker. It is ready when the bread is browned.
