Bhagara Baingan (Sweet and Spicy Baby Eggplant Curry) [Vegan, Gluten Free]

Apart from biryani, Hyderabadi cuisine is also known for its vegetarian delicacies. Bhagara baingan is panfried baby brinjal (eggplant) cooked in a sweet, spicy coconut and peanut gravy. The curry is often served as a side dish with biryani but tastes even more delicious with basmati rice or Indian flatbread.

How to Prepare Bhagara Baingan (Sweet and Spicy Baby Eggplant Curry) [Vegan, Gluten Free]

    1. Wash and pat dry the baby brinjal. Cut an X into the bottom of each brinjal using a knife.
    2. Set the sauté mode of the Instant Pot for 15 minutes. Add the oil to the inner pot. Once the oil is hot, add the brinjal. Cook on both sides by turning them halfway through; the total cooking time should be 5 to 6 minutes. Transfer the brinjal to a plate and set aside.
    3. Combine the red onion, garlic, red chiles, coriander seeds, sesame seeds, peanuts, poppy seeds, cumin seeds and fenugreek seeds in the inner pot. Sauté until the timer beeps. Add the coconut, and quickly stir the mixture. Do not fry the coconut for too long along with the spices as it could burn quickly; a quick roasting of a few seconds is enough to release the coconut flavor.
    4. Transfer the onion mixture to a blender and blend it into a smooth paste using 1/4 cup (60 ml) of the water.
    5. Transfer the paste back to the inner pot. Add the salt, red chili powder, turmeric, tamarind paste, brown sugar and the remaining ¾ cup (180 ml) of the water. Stir to combine.
    6. Arrange the fried brinjal over the curry masala paste. Close the lid. Set the steam valve to the sealing position. Pressure cook at high pressure for 2 minutes. Wait for the natural release of the steam.
    7. Garnish with cilantro. Serve with chapati or paratha.
