Ingredients You Need for Banh Mi Noodle Bowl With Sticky Tofu [Vegan, Gluten-Free]

For the Sticky Tofu:

  • 1 14-ounce block tofu
  • 2 tablespoons avocado oil (or other high smoke point oil)
  • 1 tablespoon soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon Sriracha

For the Bowls:

  • 1/2 14-ounce package rice noodles
  • 1 cup shredded lettuce
  • 1/2 cup thinly sliced or shredded carrots
  • 1/2 cup thinly sliced cucumbers
  • 1/2 cup shredded red cabbage, or picked red cabbage
  • 1 handful cilantro, chopped
  • 1 avocado, sliced
  • Sesame seeds, for topping

How to Prepare Banh Mi Noodle Bowl With Sticky Tofu [Vegan, Gluten-Free]

To Make the Sticky Tofu:

  1. Chop the tofu into cubes and place it in a hot pan with the oil over medium-high heat.
  2. Allow to brown, approximately 3-5 minutes, and then flip the cubes to brown on the other side.
  3. Once each side is golden brown and crispy, turn off the heat, and toss with the soy sauce, hoisin sauce, and Sriracha.

To Make the Bowls:

  1. Cook the rice noodles according to the package directions.
  2. Plate your bowl with the noodles on the bottom, and top tofu, lettuce, carrots, cucumber, red cabbage, cilantro, avocado, and sesame seeds.
  3. Top with extra soy sauce and hoisin sauce.
