These vegan banana pancakes are so quick and easy!

Ingredients You Need for Banana Pancakes [Vegan]

  • 1/2 cup ground porridge oats
  • 1/2 cup plain flour
  • 1 teaspoon baking power
  • 1 cup soy milk
  • 2 teaspoons sweetener (avoid artificial sweeteners)
  • 1 ripe banan

How to Prepare Banana Pancakes [Vegan]

  1. Blend the banana and milk until smooth
  2. Add the rest of the ingredients and blend until all is mixed
  3. Heat a (non-stick) frying pan and add oil/spray to make sure the mix doesn’t stick (keep on a low-medium heat, it will make them rise more and become fluffier)
  4. Pour in some batter (about 25ml) and move the pan around to make sure the mix is quite thin
  5. Cook for about 2 minutes until bubbles appear (time may vary), flip over and  cook for a further 30 seconds until all the mixture has solidified – transfer to a plate and repeat for the rest of the mixture
  6. Enjoy!
