You won't want to let a drop of this vibrant sauce go to waste. A little savory, a little sweet, and creamy from cashews, this sauce can be a topping for practically anything, but we especially recommend drizzling it on salads!

Ingredients You Need for Balsamic Blueberry Sage Sauce [Vegan]

  • 1/2 cup raw cashews 
  • 1/2 cup blueberries
  • 1/2 cup water
  • 1/4 cup balsamic vinegar (good quality)
  • 1 sprig fresh sage, (about 2 teaspoons of sage leaves roughly chopped)
  • 1 small garlic clove
  • 1/4 teaspoon Himalayan pink sea salt

How to Prepare Balsamic Blueberry Sage Sauce [Vegan]

  1. Measure out half a cup of cashews, add them to a bowl and cover them with water, so they are at least an inch below the water line. Let them soak at least 3-4 hours, preferably 8 hours, or overnight.
  2. Drain and rinse the cashews, then add to a high speed/powered blender.
  3. Add half a cup of fresh water, half a cup of blueberries, and the rest of the ingredients to the blender as well. If using frozen blueberries, let them thaw at room temperature first.
  4. Blend it all together until smooth with no speckles.

Notes

Store the leftovers in a sealed container in the fridge.
