Kanelbullar is a type of Swedish cinnamon roll that is just as delicious as the American version. These rolls are infused with the warming, classic seasonal flavors of apple and pecans. They are made with oatmeal, making them a healthier take on the traditional pastry.

Ingredients You Need for Apple and Pecan Oatmeal Kanelbullar: Swedish Cinnamon Rolls [Vegan, Gluten-Free]

For the Dough:

  • 1 2/3 cups of oat flour (gluten-free if necessary)
  • 1/3 cup of rice flour
  • 2 teaspoons of instant baker's yeast
  • 1 1/2 tablespoons coconut sugar
  • 1 teaspoon of cinnamon
  • 1 pod of green cardamom
  • 1 pinch of salt
  • 1/2 cup of almond milk
  • 1 tablespoon of vegan butter

For the Filling:

  • 3 tablespoons of thick apple compote
  • 2 tablespoons of coconut sugar
  • 1 tablespoon of ground cinnamon
  • 1 handful of pecans
  • Vegan butter

How to Prepare Apple and Pecan Oatmeal Kanelbullar: Swedish Cinnamon Rolls [Vegan, Gluten-Free]

  1. Grind the cardamom.
  2. Mix the flours with yeast, sugar, cinnamon, salt, and cardamom.
  3. Melt the margarine with the milk so that the mixture reaches about 95-105°F.
  4. Pour over the flour mixture. Stir with a wooden spatula. Leave on for 5 minutes.
  5. Transfer the dough to a floured work surface and knead the dough for a few minutes.
  6. Once the dough forms a smooth ball, put in a floured bowl. Cover and leave in a warm place for 1 hour.
  7. Spread the ball into a rectangle. Brush with soft butter.
  8. Spread the compote over and sprinkle with sugar and cinnamon. Crumble the pecans and sprinkle the dough.
  9. Grease a square or rectangular mold.
  10. Gently roll the dough lengthwise. Cut the ends and then cut rounds about 2 inches long. Arrange them in the mold, cover, and let them rise for 1 hour.
  11. Preheat the oven to 360°F. Bake 35 minutes.
  12. Halfway through the baking, Rotate the pan.
  13. Monitor the cooking so that the top is golden but the kanelbullar keep soft.
  14. Remove from oven and sprinkle top with remaining pecans
