    This coffee pudding is an easy and delicious breakfast that will kickstart your day!

    Ingredients You Need for Almond Coffee Pudding [Vegan]

    • 1 cup Blanched whole almonds soaked overnight
    • 1 cup Water
    • 1 cup Almond milk
    • 1 teaspoon Vanilla extract
    • 1/4 cup Regular coffee
    • 1/2 cup Dates, pitted (soaked overnight in water)
    • Chia seeds soaked overnight with almond milk, set aside, for garnish

    How to Prepare Almond Coffee Pudding [Vegan]

    1. Drain the water from the almonds. Discard water.
    2. Drain dates until dry. Discard water.
    3. Add almonds, dates, almond milk and water into a blender. Puree, starting off low and increasing speed. While mixing, add the coffee, and vanilla extract and puree until smooth.
    4. Chill on an ice bath until cold.
    5. In a bowl, add the amount of pudding you desire and garnish with chia seeds and vegan granola.
