I have no words to describe these guys. These ice cream sandwiches are just amazing! Since peanut butter is the main ingredient in the ice cream, you do not need to add a lot of additional fat like coconut oil, coconut milk or a lot of cashews, which can dominate the flavor sometimes. Also, the addition of crunchy cookies like these add a nice touch since this dessert is usually made of a soft cookie that looks more like a brownie. Soft on the inside and crunchy on the outside. They are one of my favorite desserts in summer.

Ingredients

Chocolate & Peanut Butter Chocolate Chip Ice Cream:
  • 1/4 cup soaked cashews
  • 2 tablespoons cocoa powder
  • 1/4 cup water
  • 2 tablespoons coconut oil
  • 1/4 cup peanut butter
  • 1/3 cup agave
  • 1/2 teaspoon salt
  • 1/4 cup chocolate chips
Peanut Butter Ice Cream:
  • 1/4 cup soaked cashews
  • 1/4 cup water
  • 2 tablespoons coconut oil
  • 1/4 cup peanut butter
  • 1/3 cup agave
  • 1/2 teaspoon salt
Chocolate Chip Cookies:
  • 2 cups whole grain flour
  • 1 cup brown sugar
  • 1/2 cup coconut oil
  • 1 flax egg (1 tablespoon ground flaxseed with 3 tablespoons of with water)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup cocoa nibs or dark chocolate chips
  • Pinch cinnamon

Preparation

Chocolate Chip Peanut Butter and Chocolate Ice Cream:
  1.  Blend all ingredients except chocolate chips until smooth.
  2. Place the mixture in a bowl and add the chocolate chips. Stir gently with a spoon.
  3. Pour the mixture in an ice cream maker. If you do not have an ice cream maker, no worries! Place mixture in a plastic container and freeze. Stir it with a spoon every 30 minutes to break down the crystals. Also you could place the mixture in an ice cube mold and let it freeze until hard. Then, blend cream ice cubes right before serving.
Peanut Butter Ice Cream:
  1. Blend all ingredients together Until smooth. Place the mixture in an ice cream maker.
Cookies:
  1. In a mixing bowl combine dry ingredients.
  2. In a small bowl mix coconut oil with sugar. Then beat in the egg flax.
  3. Slowly start adding dry ingredients to the wet mixture and beat until dough is formed.
  4. Refrigerate the dough for 15 minutes and then place it on a clean-floured surface.
  5. Begin rolling out the dough until it is about 1/8 inch thick.
  6. Cut the cookies into round or square shapes using cookie cutters.
  7. Press a few chocolate chips in each cookie and place cookies onto the baking sheet, leaving 1/2-inch between each.
  8. Bake for 7-10 minutes or until lightly browned and then remove from oven.
Assembly:
  1.  Once the cookies and ice cream are ready, scoop ice cream onto one cookie and press the other on top. Enjoy !!!
