Delicious and simple 3 ingredient Gluten Free Flatbread that is also vegan. These flatbreads can be used in so many different ways. Get creative and give them a try!
3-Ingredient Gluten-Free Flatbread [Vegan]
For the Flatbread:
- 85 g gluten free self raising flour
- 65 g runny coconut yogurt
- 1 teaspoon olive oil
- Pinch salt
Ingredients for the Smokey Coconut Dip:
- 4 tablespoons coconut yogurt
- 1 teaspoon smoked paprika
- Pinch chilli flakes
- Handful freshly chopped coriander
- Pinch salt & pepper
Add the flour into a mixing bowl along with the vegan yoghurt and mix with a spoon.
Now add the olive oil and mix together with a spoon.
Now with your hands mix it together into a large ball.
Place a griddle pan on high heat, you don’t need any oil.
Flour a work surface and pat the dough ball down with your hands into the shape you want. I am for roughly 1cm thick (it can be delicate so be careful or pick it up with a spatula).
Place onto the pre-heated griddle pan and cook on each side for 2 minutes.
Whilst the flatbread is cooking, simply add all the dip ingredients into a small mixing bowl and stir.
This recipe could differ depending on what brand flour and yogurt you are using so it may need tweaking to suit those. It can be a bit fiddly the first few times you make them so give it a couple tries and you will end up perfecting it.
