Cooking Time




For the Pancakes:

  • 1 large banana
  • 1 tablespoon chia
  • 1 1/2 cup gluten-free oats
  • 1 1/4 cup oat milk (or other milk of choice)
  • 1 tablespoon neutral oil
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • splash vanilla extract
  • pinch sea salt
  • 1/4 cup coconut sugar (optional, or add to taste)

For the Toppings:

  • more banana, chopped
  • maple syrup, to drizzle
  • cacao nibs, to sprinkle
  • coconut flakes, to sprinkle
  • dollop coconut yogurt


  1. Mash banana in a large bowl. Add chia, oats, oat milk, neutral oil, baking powder, baking soda, cinnamon, splash vanilla extract and pinch sea salt. Mix well to combine. Add 1/4 cup coconut sugar (or to taste depending on how sweet you like it). Mix well. Cover and let pancake mix thicken (at least 15-20 minutes).
  2. Heat a non-stick skillet to medium heat with a splash oil. Add a heaping tablespoon of pancake mixture to the pan, and cook for 30s to 1 minute, or until golden and brown. Flip and cook remaining side. Continue process until you've used up all your pancake batter
  3. Serve banana oat pancakes with more chopped banana, optional to sprinkle with coconut flakes and cacao nibs, drizzle with maple syrup.
