Though fall is just kicking into gear, it’s already time to look forward to the sweet taste of summer as Portland prepares for the late springtime arrival of Be Sweet, a vegan ice cream shop created by the team who established the Israeli plant-based restaurant Aviv. Chef Tal Caspi, creator of both Be Sweet and Aviv, explains that “So much of traditional Israeli food is already vegan – you can always eat falafel, a plethora of salads, hummus, tahini – so it’s an easier transition than in the U.S., where the cuisine tends to be heavy on animal products.”

Caspi “has been selling his ice creams at the restaurant [Aviv], playing with particularly savory flavors like pistachio and curry,” and Be Sweet’s ice cream offerings will include even more unique flavors such as hatch green chile, fig lemon thyme, and jalapeno pineapple. Talk about scoops of inspiration! Though the exact base for this ice cream is still unknown, Caspi’s previous creations have had a coconut cream base, sure to make for an extra smooth and creamy creation.
