The world’s most famous cooking school Le Cordon Bleu has officially launched the first plant-based pâtisserie course. It is the first of its kind.

The online course spans 10 weeks, during which chefs will be taught through online culinary demonstrations, classroom theory, tutorial sessions, and seminars. 

Deputy Head of Pâtisserie Nicolas Houchet said, “The certificate is based on the fundamental techniques and classical pâtisserie tradition, only using plant-based ingredients, which are evolving rapidly in the industry. Following customer interest in nutrition and healthy diets, the course aims to provide a new approach to the art of pâtisserie.”

The course will cover basic methods and substitutions that chefs might need to know, including allergens and how to substitute them while baking.
