Eleven Madison Park chef Daniel Humm has parted ways with Claridge’s hotel in London after he wanted to turn the menu entirely vegan. The hotel did not want the restaurant to be completely vegan, so Humm decided to part ways. 

 

Daniel Humm had been at the head of Davies & Brook when it first opened in 2019 and had a vegan awakening during quarantine. He explained, “Our practices of animal production, what we’re doing to the oceans, the amount we consume: It is not sustainable. If Eleven Madison Park is truly at the forefront of dining and culinary innovation, to me, it’s crystal clear that this is the only place to go next.”

Although the restaurant did have vegan options, Humm had a much bigger vision and wished to transform the entire menu. He and his team will remain at the restaurant until the end of the year before leaving to create his vision elsewhere.

The split seems to be mutual and highly respectful. Both parties have given polite statements about the cause of the parting. 

Claridge’s commented on the split, “We completely respect and understand the culinary direction of a fully plant-based menu that Daniel has decided to embrace and champion and now wants to introduce to London. However, this is not the path we wish to follow here at Claridge’s at the moment, and therefore, regretfully, we have mutually decided to go our separate ways.”

Many vegans and foodies are looking forward to hearing about Humm’s plans for a vegan restaurant in the new year.
