It is not your technique. Dairy yogurt sets because casein proteins form a continuous gel as acidity rises. Plant proteins do not behave that way: research on commercial plant-based yogurts describes them destabilising under acid into a weak, non-continuous gel, which is why serum separates and the texture runs.
