Plant-based shoppers know that egg replacements are few and far between, especially in comparison to the abundance of plant-based meat and dairy alternatives that are available. This is why consumers rejoiced when JUST debuted its plant-based scrambled egg alternative called JUST Egg. Still fresh on the scene, the product has begun to roll out in restaurants and retailers, and now Boston’s Clover Food Lab is the first restaurant in New England to serve up the JUST Egg!
Clover Food Lab has always had environmental Conservation as part of its mission, with the goal of targeting Climate change by way of the food system. Considering JUST Egg is made from mung beans and has far less of an environmental impact than traditional Earth-depleting egg production, the product fits in well with the restaurant chain.
Beginning today, all locations of Clover Food Lab will serve up JUST Egg from 7 AM to 11 AM, and their 24-hour Central Square restaurant will have it available from midnight to 11 AM. They have made a rendition of a classic Italian pepper and egg sandwich, serving up JUST Egg with seared bell peppers and caramelized onions in a fluffy pita. And as a sweet treat, they will also be carrying JUST Cookie Dough — yum!

As JUST points out on their website, eggs are the most abundant animal protein source on the planet, so having a readily-available plant-based egg alternative that looks and tastes like actual eggs is something our current broken food system so desperately needs, and we cannot wait to see how JUST Egg helps shape the future of food.
