If you live in the U.S., then you (probably) know that Memorial Day is coming up this Monday. After Thanksgiving and Christmas, we would say that Memorial Day is likely one of the biggest food holidays in the United States. It’s what we consider to be the official kickoff of the summer season — which means that it’s time to break out the grills! Unfortunately, if you’re trying to eat plant-based, there are a few challenges that you might run into when attending a classic Memorial Day barbecue. We tend to associate barbecues with meat.
Luckily, it’s easy to plan a meat-free cookout. If you’re not making your own veggie burgers and meaty hot dogs (or carrot dogs!), then there are plenty of meatless options on the market that will ensure you never feel like you’re missing out while your friends and relatives chow down. While we love options that look and taste just like the food we used to love, we can use those grills for more than just sizzling veggie burgers. We can also grill fruits and veggies! And one grilled delight that’s been on our minds since cold weather put a stop to grill season is the drool-worthy, stuffed avocado you see below. Those grill marks are like food porn.
This Mediterranean Grilled Chickpea-Stuffed Avocado was developed by food blogger and photographer Taylor Kiser of Food Faith Fitness. Before her, we didn’t even realize that taking a rich, creamy avocado and letting it sizzle on the grill was even a route we could take at barbecues. And, as if avocados couldn’t get any better, she went ahead and stuffed those avocado halves with a mixture of crispy, smoky grilled chickpeas and fresh sliced cucumber and tomatoes and then topped it all off with lemon-tahini dressing and fresh cilantro. Wow.
