A few weeks ago, Oprah Winfrey sat down with environmentalist Suzy Cameron to discusses the benefits of a plant-based diet. Along with a plant-based diet being fantastic for our health, they also discussed how beneficial eating plant-based can be for the planet. In fact, one can save 50,033 gallons of water a year by not consuming dairy and 162,486 gallons of water a year by ditching burgers, bacon, and nuggets — that’s enough water for 445 people!

As Cameron told Oprah, “Changing one of your meals a day to a plant-based meal saves 200,000 gallons of water and the carbon equivalent of driving from Los Angeles to New York.” When Oprah heard that one can make an impact just by eating one plant-based meal a day, she called it ‘graspable.’ This clearly stayed on her mind since she has indeed gone on to challenge herself to eating one plant-based meal a day for thirty days.

She told Oprah Magazine: “If you’ve been thinking about going vegetarian or vegan, I think this is a good way to lean into it where you don’t have to give up everything you’ve been eating your whole life in one day.” Oprah had her personal chef, Raymond create a thirty-day meal plan for her. Her meals include things like sweet potato curries, rice and beans, risotto, and more!

Oprah is a very influential person who has inspired many over the years. Hopefully many people will follow in her footsteps to incorporate more plant-based meals in their lives for the sake of the planet.
