Ingredients You Need for Sweet Potato Chocolate Tahini Fudge [Vegan, Gluten-Free]

  • 1 large sweet potato, peeled and steamed until soft
  • 3 tablespoons cold-pressed coconut oil, melted
  • 2 tablespoons hulled tahini
  • 3 tablespoons raw cacao
  • 3-6 tablespoons rice malt syrup or maple syrup, to taste
  • 1 teaspoon sea salt or Himalayan pink salt

How to Prepare Sweet Potato Chocolate Tahini Fudge [Vegan, Gluten-Free]

  1. Peel, chop, and steam the sweet potato.
  2. Once soft, remove and place into food processor.
  3. Add remaining ingredients and blend until all combined and smooth. You may need to scrape down the sides from time to time.
  4. Put the mixture in a baking paper-lined, medium-depth dish and spread out evenly.
  5. Allow to set in the freezer overnight.
  6. Remove from freezer and slice into squares.
  7. Keep refrigerated or in freezer in an airtight container for up to 1 week.
