How to Prepare Flourless Zucchini Fritters [Vegan]
- Add the chickpea flour with all of the spices into a bowl and mix well.
- Add the cilantro, onion, and zucchini, and mix.
- Add the water and mix until it is nicely combined. Add the baking powder and mix again.
- Heat up a frying pan over medium heat.
- Add a couple of tablespoons of coconut oil and wait until the pan is out.
- Using a 1/3 cup, pour the chickpea batter onto the pan and wait a couple of minutes.
- Flip and do the same on the other side, it should be a golden brown color.
- Continue until you are done the batter. Serve.



These came out great! I did tweak them a little. No hot stuff but I did add a bit of curry powder. I also used way less salt than they call for, and a whole onion and a whole zucchini. No leftover ingredients that way. Wonderful!
