  • 1 tablespoon olive oil
  • 1 cup red onion, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon ginger powder
  • 1 teaspoon dried fenugreek leaves
  • 2 cups unsweetened coconut milk
  • 1/2 teaspoon salt
  • A pinch of sugar
  • 1 14-ounce can black beans, rinsed and drained

How to Prepare Black Bean Curry [Vegan, Gluten-Free]

  1. Heat oil in a nonstick pan and add onions. Sauté until golden brown.
  2. Add all the spices to it and sauté for another 30 seconds.
  3. Add coconut milk, salt, and sugar. Cook uncovered for 5 minutes or until the first boil.
  4. Add black beans, mix, and cook again for 5 minutes.
  5. Serve over quinoa or brown rice.

  1. Made this tonight. Nice recipe but a bit bland once cooked. I added about 3 Tbsp tomato puree (concentrate) and this perked it up. Everyone loved it and wanted more. We\’ll be doing it again.
