Recipe: Raw Protein Thin Mints

Everyone loves thin mints, right? We all looked forward to that time of year, when the green box was delivered. The perfect blend of chocolate, mint, and sweetness.

Today we have the BEST thin mint recipe that is low in sugar, gluten-free, raw and vegan, of course. It is so easy to make and only requires a few ingredients…and no baking of course!

prep time: 5 minutes

bake time: zero

serving: varies depending on your cookie scooper. we tend to get around 9-10 cookies.

Ingredients:

Preparation:

  1. Place all ingredients into a bowl and stir together.
  2. Scoop onto plate or tray, then set in fridge to set. want the cookies to be hard to the touch.
  3. Keep refrigerator or store in freezer.

    Have made these twice! Used hemp protein powder; the cocoa is 2 1/2 tablespoons. Cannot believe how delicious these are!!1
