Ingredients You Need for Vegetable Protein Curry [Vegan, Grain-Free]

  • 1 can coconut milk
  • 1 can chickpeas, rinsed
  • 1 10.5-ounce can of vegan mushroom gravy or make your own
  • Half bag of vegan meat crumbles (such as textured vegetable protein) or tofu
  • 1 large potato, chopped
  • Big handful of spinach (fresh or frozen)
  • 2 tablespoon vegan mayonnaise
  • 2 tablespoons yellow curry powder
  • 1 tablespoon garam masala
  • 2 tablespoons brown sugar
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt, to taste
  • Rice (optional)

How to Prepare Vegetable Protein Curry [Vegan, Grain-Free]

  1. Cook rice according to package instructions if using.
  2. Boil chopped potatoes for about 10 minutes.
  3. Start browning veggie crumbles or tofu in a pan using a bit of oil.
  4. Add drained can of chickpeas and all seasonings once the crumbles or tofu starts to brown.
  5. Cook everything for another 5 minutes until potatoes are done boiling.
  6. Add drained potatoes, coconut milk, gravy, vegan mayonnaise, to the pan and simmer on low for 10-15 minutes or until you get a nice creamy consistency.
  7. Mix in spinach towards the end.
