These soft & fluffy crepes are perfect for the weekend (or any day, really)!
Vegan Crepes [Vegan]
- 1/4 cup oat flour
- 1/2 cup whole wheat flour
- 1 cup plant-based milk, plus more as needed
- 1/2 teaspoon baking powder
- 1 tablespoon coconut sugar
Mix all ingredients in a bowl until combined. If the batter is too thick, add more milk to yield thinner crepes.
Spoon the batter onto a greased pan on medium-low heat, cooking each side until golden brown.
Serve with toppings of choice & enjoy!
