Ingredients

  • 3 1/2 cup cherry (roma) tomatoes, quartered 
  • 1 tablespoon apple cider vinegar or white wine vinegar
  • 2 garlic cloves, finely minced
  • 2 1/2 tablespoons maple syrup
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika

Preparation

  1. Add the tomatoes, vinegar, garlic and maple syrup to a small pot and bring to a boil. Simmer covered on low to medium heat for 10 min. Stir from time to time.
  2. Stir in the spices and cook covered for another 5 minutes. Remove the lid and simmer for 15 minutes.
  3. Store in a closed container for up to 8 days in the fridge.
