You want to take your daily avocado toast to the next level? Then slather some of this savory tomato jam on top – we are sure you will not regret it!
Tomato Jam [Vegan]
- 3 1/2 cup cherry (roma) tomatoes, quartered
- 1 tablespoon apple cider vinegar or white wine vinegar
- 2 garlic cloves, finely minced
- 2 1/2 tablespoons maple syrup
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
Add the tomatoes, vinegar, garlic and maple syrup to a small pot and bring to a boil. Simmer covered on low to medium heat for 10 min. Stir from time to time.
Stir in the spices and cook covered for another 5 minutes. Remove the lid and simmer for 15 minutes.
Store in a closed container for up to 8 days in the fridge.
