Thai Tofu 'Larb' (Bad Name, Delicious Dish) [Vegan]

30

This is a Thai appetizer that’s full of flavor. It's usually made with minced meat, but we're going for a tofu version today! It’s handy to bring to a potluck or get together because it’s best eaten at room temperature.

Ingredients You Need for Thai Tofu ‘Larb’ [Vegan]

Dressing:
  • Juice from 1 lime
  • 2 tablespoons coconut aminos
  • 1 teaspoon soy sauce
  • 1/4 teaspoon dried red chili flakes
  • 1 teaspoon dulse flakes
  • 1/4 teaspoon sea salt
  • 1/4 cup shallots, chopped
  • 1 tablespoon fresh red chili, chopped  – take the seeds out if you don’t want it as spicy
  • 4 garlic cloves, minced
  • 1 green onion, sliced (cut off the stem and use the whole thing)
  • 1 box of firm tofu, liquid pressed out and then crumbled with your hands (use the tofu that’s in the refrigerator section at the store)
Wraps:
  • Romaine leaves
  • Thinly sliced red onion, sunflower seeds and cilantro as garnish
