Ingredients

For the Tempeh Salad:

  • 8 oz tempeh
  • 1/4 c vegan mayo
  • 1 teaspoon lemon juice
  • 3/4 teaspoon dill
  • 1/2 teaspoon caraway
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

For the Toppings:

  • 2 tablespoons red onion, diced
  • 1/4 c + 2 T carrot, shredded
  • 1 teaspoon parsley

Preparation

  1. Cut tempeh into 1 inch cubes. Steam for 10 minutes.
  2. Put tempeh, vegan mayo and spices into a food processor and blend until there aren't any large lumps. Mix in onion, carrot and parsley by hand.
  3. Works great on a sandwich or salad or as an appetizer with pita bread or crackers -- or just get out your fork and chow down!
