These Sugar-Free Chocolate Peanut Butter Lara Bars contain only 5 ingredients and provide a great source of energy!
Sugar-Free Chocolate Peanut Butter Lara Bars [Vegan]
- 14 Medjool dates pitted
- 1/2 cup raw cashews + 2 tablespoons [divided]
- 1/4 cup roasted unsalted peanuts
- 1/4 cup natural unsweetened cocoa powder
- 2 tablespoons organic peanut butter
Add all ingredients [with exception of 2 tbsp cashews] to bowl of food processor, blend for one minute - scrap down sides if needed and blend for additional 20 seconds.
Line 8x8 inch square dish with plastic wrap, remove mixture from food processor bowl and smooth into even layer. The mixture will be thick. Then use a slightly damp spatula to create a smooth finish.
Chop remaining 2 tablespoons cashews, then sprinkle across the bars. Place another piece of plastic wrap over the bars and press the cashew pieces down into the bars.
Refrigerate 15-20 minutes, then remove plastic and bars from 8x8 inch pan and cut into 12 even bars. Store in airtight container in refrigerator for up to one week.
