This strawberry parfait is like a single serving of strawberry shortcake deconstructed into its fruity, creamy and crunchy elements and layered on top of each other into a beautiful, secretly healthy dessert or breakfast.

Ingredients You Need for Strawberry Parfait [Vegan, Gluten-Free]

For the Creamy Layer:
  • 1/2 cup  plain soy yogurt (or plant-based yogurt of choice)
  • 1 teaspoon xylitol (or sweetener of choice)
  • 1/4 teaspoon vanilla extract
For the Strawberry Layer:
  • 2-4  strawberries, chopped
For the Crunchy Layer:
  • 3 tablespoons old-fashioned oats (use gluten-free if desired)
  • 1 tablespoon almond butter (or other nut or seed butter)
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon xylitol (or sweetener of choice)
  • optional: 1/4 teaspoon guarana powder

How to Prepare Strawberry Parfait [Vegan, Gluten-Free]

  1. Mix the yogurt with xylitol or other sweetener and vanilla, spoon half of it in a tall glass (mine was about 1 cup in volume).
  2. Add the chopped strawberries on the yogurt layer.
  3. Combine oats, almond butter, vanilla, and xylitol. Add guarana in case you need an extra energy kick this morning.
  4. Put the crumbly mixture on top of the strawberries. Cover with the rest of the yogurt mixture and decorate with any leftover strawberries or oats.
  5. Enjoy!

Notes

Xylitol is toxic to dogs. If you have a dog, make sure he doesn't come into contact with this parfait or use a different sweetener.
