Spicy Ginger Square With a Sticky, Spiced Date Topping [Vegan, Gluten-Free]
Ingredients
For the Base:
- 1 cup brown rice flour
- 1 1/2 teaspoons ground ginger
- 2 teaspoons stevia granules
- 1/3 cup coconut butter, melted
- 1/2 cup water
For the Topping:
- 1 cup dates
- 2 teaspoons ground ginger
- 1/3 cup coconut butter, melted
Preparation
To Make the Base:
- Preheat the oven to 350°F.
- In a bowl, combine all ingredients for the base except coconut butter and water.
- Stir through the water and coconut butter.
- Line a small tray with baking paper.
- Press the base mixture into the tray.
- Bake for 30 minutes.
To Make the Topping:
- Meanwhile, make the topping by blending all the topping ingredients in a high-speed blender until a sticky dough forms.
- When the base has cooled, spread on the topping.
- You can chill the slice to form up the topping if needed before slicing.
