Sugar cookies are a classic dessert, but here they get a seasonal twist with warm autumn spices and a decadent maple icing.
Spiced Sugar Cookies With Maple Icing [Vegan]

Ingredients
Cookies:
- 1 1/4 cup flour
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 cup vegan butter
- 1/2 teaspoon vanilla extract
- 4 tablespoons water
Icing:
- 1 cup sugar
- 1/4 cup vegan butter
- 1/4 cup non-dairy milk
- 1/4 cup maple syrup
- 1/2 teaspoon cinnamon
Preparation
To Make the Cookies:
- Preheat oven to 350°F.
- Combine all dry ingredients and mix until blended.
- Add butter and wet ingredients and mix with a hand mixer on low until combined.
- Roll the dough with a rolling pin (or in my case a glass canister) until the dough is approximately 1/4-inch thick.
- Cut the dough out with cookie cutters in your desired shape.
- Freeze the dough for thirty minutes and remove it carefully with a spatula.
- Bake cookies for eight minutes until they have risen. Let them cool, using a wire rack if available.
- Ice when cooled.
To Make the Icing:
- Add all ingredients to a pot on the stove and mix.
- Turn the stove to medium-high and boil for one minute.
- Let it sit for ten minutes.
- Then mix in the pot with a hand mixer for 3 minutes.
- Use immediately.
