Ingredients

  • 2 cups flour
  • 1/3 cup coconut oil
  • 1/2 cup ice water
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 2 cups greens, chard, spinach or a mix (tightly packed)
  • 2 cups chopped mushrooms
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 1 teaspoon lemon juice

Preparation

  1. In a large bowl, mix the flour and salt with your hands. Slowly start adding the coconut oil with your hands and integrate with the flour and salt. You are looking for a consistency that resembles wet sand. You can also do it in the food processor. Do not over process.
  2. When it looks like wet sand, add the ice water spoonful by spoonful until it all comes together as a smooth dough.
  3. Cover with a damp cloth and set aside.
  4. Pre-heat the oven to 350°F.
  5. Heat the olive oil in a skillet. Add the onion and when transparent add the mushrooms. Move constantly to prevent sticking.
  6. Add the greens to wilt and then the teaspoon of lemon juice.
  7. Roll the dough on a silicone mat or parchment paper until about 1/8 inch thick. Cut into circles.
  8.  Stuff each circle of dough with the mushroom mixture and fold in half. With a fork, seal each pie.
  9. Put on a baking sheet and put in the oven for 20-25 minutes, or until you see that the hand pies are golden on the top.
