Ingredients You Need for Vegetable Curry With Plantains [Vegan]

  • 2/3 cup coconut milk
  • 1 15-ounce can chickpeas
  • 1 bell pepper
  • 2 onions
  • 1 large plantain
  • 2 tablespoons coconut oil
  • 1 teaspoon curry paste
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste

How to Prepare Vegetable Curry With Plantains [Vegan]

  1. Seed the bell pepper, peel the onions. Chop both into coarse bits.
  2. Heat 1 tablespoon coconut oil in a saucepan. Add the bell pepper and onions and sauté for about 5 minutes.
  3. Add coconut milk, chickpeas, curry, and turmeric. Bring to a boil, then reduce heat and let simmer for 10-15 minutes. Season with salt and pepper.
  4. Peel the plantains and cut into slices. Heat 1 tablespoon coconut oil in a frying pan and add the plantain slices. Fry on medium for about 3 minutes on each side.
  5. Serve the curry topped with the plantain slices.

Notes

Optional: serve with rice and pistachios.

  1. I still have not found a curry that I really like. I understand that in India almost every family mixes their own curry.
    There are probably thousands,but I have seen only pre-packaged mixtures in the spice aisle.
    That I s something to look into,and try making our own curry.

    1. Some of my personal favorites are made by the English company, Pataks.

      Try their Korma paste and mix it with coconut milk if you want a good curry base. It’s reasonably easy to find at Asian markets in the USA, sometimes even at Kroger and other large supermarkets.
